Copenhagen is known for some of the most radical approaches to become a true leader in city sustainability, not just in Scandinavia but in the World.
The Copenhagen restaurant ‘Rub & Stub’ is no exception, here all food is prepared from food industry surplus ingredients, and the staff consists mainly of volunteers.
Since opening in September 2013, the restaurant has become a benchmark within the sustainable culinary world, and offers a unique concept for companies, and others, who have an interest in making events and meetings as ecofriendly as possible.
Rub & Stub can seat a maximum of 100 people in two rooms. The location itself has a twist, as it is an old town house, which oozes old Copenhagen history, with raw wood beams and an unusual décor.
And rest assured, Rub & Stub does not serve garbage, the food is made with ingredients which shops cannot sell due to change in consumer demand, or they do not have the space to store.
